The Advanced Diploma in International Hospitality and Tourism Management builds students’ confidence in the hospitality, attractions and tourism industry, as well as to develop their supervisory skills.

Students will gain knowledge in areas such as Human Resource Management and Cross-Culture, Cruise Management, Special Events Management, Events and Conventions Management, Food Service Management, and Sustainable Management.

Students will complete a 6-months industrial attachment with either our overseas or local partners.

Upon completion of the Diploma programme, students will be able to advance to Bachelor and Master programmes.

The module aims to equip students with the abilities and skills to adapt and manage an increasingly diverse and competitive business environment. Topics include the strategic role of human resource management; diversity management; job analysis and job design; human resource planning; and recruiting, screening and selection of candidates; interviewing candidates; orientation, training and development; compensation, incentives and benefits; evaluating and appraising employee performance; and organizational culture and change and cross-cultural issues.

This module will focus on the business organization and operation of the global cruise industry. The module will introduce learners to the cruise industry principles, practices and methods required to successfully enter the cruise business. Content will focus on both supply (cruise lines), and demand (cruise passengers) equations, with a special focus on the critical role of cruise consumer behaviour and related marketing activities.

This module aims to provide theoretical methodological base of knowledge that will enable students to effectively integrate special events. Students preparing for a career in hospitality management must have an understanding of the importance of special events, entertainments, meetings and other events on our industry. The significance of these events cross international and cultural boundaries and represent an opportunity to increase revenues and touch the customer in a personal way.

This module will focus on the analysis of the operations and determines the best course of action in food & beverage operations and management. It examines the ways to maximize service efficiency and productivity to satisfy demands of today’s guests. Topics include organization of food & beverage operations, marketing, nutrition, menu, standard product costs & pricing strategies, productions, service, cost controlling, facility design, layout and equipment.

This module aims to provide an overview of the convention industry, including meetings, trade shows, special events, expositions, conferences (MEEC), and incentive travel; roles of key industry supplier partners.  Students will learn how professional event and convention management planners negotiate contracts with vendors and speakers, arranging entertainment and providing for attendees’ needs.

This module provides an overview of sustainable development and how it fits with the tourism and events industries. It reviews the importance of planning and managing sustainable practice reviewing examples of best sustainable practice drawn from a range of sectors.  Students will learn how to increase the benefits and to reduce the negative impacts caused by tourism for destinations.  This can be achieved by: protecting natural environments, wildlife and natural resources when developing and managing tourism activities.

This module exposes students to a particular job and a profession or industry. It prepares students for the industry by giving them an opportunity to understand working conditions, develop relationships with hospitality and tourism workers, and more importantly to improve the students’ future.

Each module is assessed by academic work comprising written assignments, case study reports, essays, examination as determined by the subject profile. The assessment criterion varies from module to module and level to level.

Mature Candidates: Applicants must be at least 30 years of age with 8 years of working experience
